A native says Americans usually consider SAT as a concept of plural thing, which is composed of Math, Reading, etc. And the native says it's all right to say "I take SAT on Saturday" and that's because in the sentence SAT is for an individual. Plus, in the above sentence,'You've never taken the SATs?' the asker would've implied that the answerer possibly took the test more than once. It's tricky. In a nutshell, either singular SAT or plural SATs is okay even for an individual.
